Recipe was given to me by my aunt who is a Madras.
2 lbs lamb cubes
2 tbsp Garam Masala
1 tsp turmeric
1 tsp roasted geera
2 medium potatoes
1 tbsp tomato paste
1 tsp ground cinnamon
2 whole cloves
4 cloves of chop garlic
1/2 of a whole onion- chop
2 broad leave thyme (Pudina)
1 tbsp fresh thyme
2 tbsp chop scallions
Garlic, onion, paprika, and black pepper powder
2 tsp salt
1 hot pepper
1 tbsp oil for cooking
Wash meat with vinegar or lime juice. Drain out the water and season with garlic, onion, paprika, and black pepper. Place in the refrigerator overnight.
In a medium pot, of boiling water. Add season lamb, and let it boil for a few minutes.
Drain and set side.
In a small bowl, add garam masala, geera, and turmeric, cinnamon, and clove. Mix with 2 tbsp water and set aside.
In a medium pot, add oil and let it hot. Add garlic and onion, and cook for a few minutes. Add masala mixture and continue to cook for a few more minutes. Add lamb and potatoes. Cook cover on low-medium heat for about 15-20 minutes.
Add hot water to cover meat, then add salt, tomato paste, pudina, thyme, pepper, and scallions. Cook on medium heat, cover with lid. Cook until potatoes are boiled and lamb is very soft.
Serve with dhal, roti, dhal puri, or rice.
