Metemgee



Ingredients:

2 medium sweet potatoes
2 yellow plantains
3 small eddoes
1 medium cassava
6 small okras
1/2 onion
1 PK saltfish (Cod)
3 wiri wiri peppers
4 chopped scallions
4 cups water and 2 cans coconut milk


For the Dumplings:

8 oz all purpose flour
1 tsp baking power
1/2 cup milk
1 tbsp butter
pinch of salt


Directions:

Peel cassava, eddoes, sweet potatoes, plantains, and cut into pieces for cooking.
In a large pot, add water and coconut milk.  Add all the vegetables except the plantain and okra.
Cover slightly and cook for about 20 minutes.

Soak saltfish in water for 1/2 hour. In a small pot, bring half of the pot of water to a boil. Add salt fish and let it boil for 10 minutes. Remove from pot and break into pieces.

Add plantains to the pot after 20 minutes of cooking. Cook for another 10 minutes. Add okra and saltfish, and cook for 10 minutes. Add flour mixture to the pot and let it cook for another 10 minutes.

For the Dumplings: Mix all the ingredients together and let it form a dough. If its too stiff add a tsp of water. Break into small pieces and drop in the pot with the vegetables.
