Kanji Rice






Recipe-from my Auntie Kamachie (Real Madras Lady)

2 1/2 cup rice
1 1/2 cup dry chick peas
1 1/2 cup dry black eye peas
1 dry coconut
Onions, salt and scallions (Shallot)

Soak the chick peas and black eye peas overnight separately, then boil both separately until soft and set aside.

In a large pot, add 3/4 pot of water to boil. Wash and add rice to the pot.

Add salt, depends on how much salt you are using in your cooking.

Add the chick peas and black eyes when rice becomes soft, then add your grated coconut to the pot.

Add slice onions and scallions.

Serve in the coconut shell. Enjoy :)
