Sweet Rice (Rice Pudding) Part 2


1 cup Arborio rice
2 cups water
3 cups milk + 2 cup extra
1/3 condensed Milk
1 tsp. vanilla extract
2 pieces of cinnamon stick (about an inch)
3 Tbsp. sugar
1 Tbsp. unsalted butter
Pinch of Salt
Garnish with nutmeg

Directions:
1. Bring the water to boil. Add the rice, pinch of salt, sugar, cinnamon stick, and butter. Cook the rice until it’s well done and tender.
2. Add the 3 cups of milk and vanilla extract to the rice. Stir well to mix and cook uncovered.
3. Add the remaining milk and condensed milk. Stir and cook over low heat until thickened.  Remove from heat and let it cool to room temperature. Garnish with nutmeg.
4. Serve with your favorite dishes. Puri, Dhall Puri, etc
