On the griddle cooking, first rub some oil on the hot griddle, then place the roti, after that flip roti and rub oil on both side.

2 cups all purpose flour

3/4 cup water

1/4 tsp salt

2 tsp baking powder

1 tsp sugar

1 tbsp butter

1/2 cup oil

1/2 cup flour reserved.

Mix all the dry ingredients together, add butter and continue to mix.  Add water and mix into a soft dough.

Let sit for 30 minutes. Cover with a damp cloth.

Roll into a log and cut 6 equal  pieces. Dip the dough into reserved flour on both side.

Take a rolling pin and roll the dough out into a square.  Glaze dough with oil and sprinkle with some flour.

With the side facing you, fold the dough into three equal parts.  Then fold again into 3 equal parts

After 15 minutes roll the dough out.

On a hot griddle, or tawah, rub some oil on the griddle and place roti on top. Cook for about 2 minutes on each side.

Continue the process with the remaining dough.

Wrap roti with a tissue and foil wrap to keep warm.

Eat with your favorite curry, stew or vegetables.

PLEASE NOTE: IF YOU ARE NOT USING A KITCHEN AID MIXER, YOU MIGHT NEED TO ADD A LITTLE MORE WATER WHILE MIXING.
