Thai Red Curry Paste
3 Lbs Chicken- cut into pieces
8 Thai eggplant
4 lemongrass cut into 1 inch
1 tsp oil
Heat oil in a pot.
Add curry paste with 2 cups water and let it come to a boil
Add chicken and lemongrass
Add 2 more cups of water
Cover and cook until chicken and eggplant are nice and soft.
Tips: You might want to add more water if you want. I used water instead of coconut milk.
