Trinidad Stew Lamb


2 lb lamb cut into little chunks
3 cloves garlic-chopped
1/3 of whole onion-chopped
1 tbsp fresh ginger
2 1/2 tbsp brown sugar
2 tbsp tomato paste
2 tsp soy sauce
2 tsp red cooking wine
1 carrot- cut into slices
2 medium potato-cut into small cubes
1 can red beans
2 tsp salt
1 hot pepper
2 tbsp green seasoning
Boiling water

Wash lamb with white distilled vinegar

Drain and  add green seasoning

Place in the  refrigerator overnight.

Heat oil in pot. When oil is hot, add sugar and caramelize sugar until it becomes golden brown. Keep turning constantly.

Add meat and cook until meat turn brown. Add garlic, onion, potatoes, carrots, beans, and ginger. 

Cook for a few more minutes.

Add remaining ingredients and cover meat and vegetables with boiling water. 

Cover pot and reduce heat.  Cook until meat and vegetables  are nice and soft.


Tips: 
Stew beef  and chicken  are cook the same way.
