3/4 lb dried fish (Snapper)
3/4 of a small can of whole corn
2 tsp tomato paste
3 cloves chopped garlic
1 1/2 tbsp chopped onions
1 tbsp chopped scallions
1 tsp salt
1/2 tsp ground black pepper
1 tbsp oil
n a medium pot, fill the pot half way with water. Bring to a boil, add rice and salt and cook until rice is firm, not soft.
In another pot, steam the salt fish three times, each time changing the water.
In a large pot, heat oil, add garlic and onions. Cook for a few minutes. Add saltfish and tomato paste and continue to cook.
Add rice and corn, reduce heat to low and mix everything together.
Garnish with scallions.
NB: In this recipe, I use Alaskan Pollock Fillets.
Tips:
When cooking rice for saltsifh or fried rice, you don't want to over cook the rice. Over cooking will cause it to turn out soft and difficult to cook with.
