Barley Soup with Roast Turkey
Barley Soup with Chicken
1/3 cup pearl barley
1 tbsp chopped ginger
1 lb boneless chicken
Indian Spinach-several leaves
1 medium potato
2 medium sweet potato
2 medium eddoes
1 small cassava (also known as yucca)
1 small carrot
2 tsp soy sauce
1 cube bullion
2 tsp salt
1/2 pot water
Soak barley over night in a bowl with water.
Cut chicken into cubes and season with garlic, onion, black pepper, and paprika.
Fry with oil and set aside. Heat 1/2 pot water.
Wash the barley and add barley and bullion to the pot.
Add remaining ingredients and chicken.
Cook uncover until all vegetables are boil soft.
Add Indian Spinach and cook for another five minutes. ( You can used regular spinach if you don't have Indian Spinach.
